Starting the new year right with some fried fresh trout fingers and french fries. I finally found the secret to fried fish with this flaky thin batter. It is in using cake flour. Find this and other great recipes in "Fish Without A Doubt" by Rick Moonen and Roy Finamore. I got it for Christmas and have only tried one recipe, but it does not disappoint.

Cake flour, not to be confused with box cake mix. Cake flour is more finely ground than normal flour, and therefore more fluffy. You find it near the regular flour at the grocery.

Bob is so much more than a Betty Crocker I think he is almost a Rachael Ray. The real kudos should go to Sunset' for giving us these tips.

Those look just like sweet and sour chicken from the chinese joint. I will admit those fish fingers do look good!
